Best Pumpkin Pie

1 ½ cups pumpkin
¾ cup sugar
2 eggs
1 can evaporated milk
1 teaspoon cinnamon
½ teaspoon ground ginger
¼ teaspoon ground cloves
¼ teaspoon grated nutmeg
½ teaspoon salt
Make “Best Pie Crust” recipe below, and use one 9-inch round pie crust. Mix ingredients together. Pour filling and bake 15 minutes at 425°, then 45 more minutes at 350°, or until knife blade comes out clean when stuck in center of pie.

Best Pie Crust
¾ cup vegetable shortening
2 cups flour
¼ cup hot water
1 teaspoon salt
1 tablespoon milk
Mix all ingredients well. Makes two 9-inch round pie crusts.




Grandmom's Macronia and Cheese Casserole

“This one’s an old favorite that Grandad really enjoys, and that’s the most special thing of all to see. They’ve been blessed with over 65 years of marriage!”

8 ounces macaroni, cooked
1 small onion, chopped
1 (10-ounce) can cream of mushroom soup
1 (2-ounce) jar chopped pimento, drained
4 cups shredded cheddar cheese
1 cup mayonnaise

Combine all together. Place in a greased casserole dish. Combine 3 tablespoons butter and 1 cup crushed crackers. Sprinkle over macaroni. Bake at 350° for 30 minutes.
